INGREDIENTS
Black, white and green pepper (Piper Nigrum), Pink/Red pepper (Schinus terebinthifolius), Jamaican pepper (Pimenta dioica).
Black, White and Green peppercorns come from the same pepper plant: Piper Nigrum. A tropical plant that has been known in the Far East since ancient times. The taste of black pepper is spicy, white pepper slightly less so and the green pepper tastes mild. The substance responsible for the spicy taste is called piperine.
Black Pepper:
Arises from the unripe harvested green berries, which acquire their brown to black colour through drying. The surface of the black pepper is wrinkled. The flavour is spicy, sharp and aromatic.
White Pepper:
The almost ripe pepper berry is soaked in water until the flesh is loosened. The seed that remains is dried. White peppercorns taste slightly less spicy than black ones.
Green Pepper:
When the unripe berries of the piper nigrum are picked after about six months, they are green. They have a fresh, vegetal flavour and are milder than their black and white counterparts.
Pink/Red Pepper:
Pink/Red Pepper bulbs do not come from the pepper plant, they are the coral red berries of Schinus terebinthifolius. The berries are picked when still green and then dried. They taste sweet, aromatic and spicy.
Jamaican Pepper:
Jamaican pepper (Pimenta dioica) also known as "Allspice, Allspice berry or Nagel pepper" is a berry species that grows on the Jamaican Myrtle tree. The unripe berries are harvested and dried.
The dried berry has a yellow-brown to brown colour. Allspice smells like cloves with hints of cinnamon, nutmeg and some cloves, combined with pepper.
HISTORY
Pepper (piper nigrum) has a very long history, interesting to know that in the middle ages pepper was used as a valid means of payment, hence the term pepper expensive!
Originally pepper was brought to Europe by Arabs, Alexandria became the main transit port for pepper. Later the monopoly of the pepper trade lay with the Italian trading cities Venice, Genoa, Pisa and Florence until the end of the 15th century. From the moment the Portuguese explorer Vasco da Gama discovered the route along the Cape of Good Hope near South Africa, "Portuguese pepper" also entered Europe.
